Green Chili Elk
My husband is a hunter and our freezer is full of elk and deer meat. We use the game in many standard recipes that call for beef or pork. (If the meat has been processed properly, it won't have a gamey taste.) It is very lean as well as being organic and safe from diseases that may invade farm livestock.
Green Chili is one of our favorites. In the morning I put a 3 to 4 pound roast in my crock pot and pour a jar of green chili salsa over it. It cooks all day while we are gone (8-10 hours on low), and when we return at night, dinner is ready. The meat pulls apart easily and can be eaten as is or used in making tacos or burritos. The next night we typically have some in a taco salad (see below). The left-overs freeze well for a quick microwaved meal later. (If you don't have game, this recipe works equally well with a beef or pork roast.)
Variations:
As a variation on the basic recipe, peel and slice some potatoes and add to the crock pot with the meat and salsa for a nice green chili stew. Perfect accompaniments are cornbread and a salad.
Taco Salad
On each plate place a handful or two of lettuce. Top with a handful of crumbled tortilla chips and a helping of shredded meat. Have other ingredients (chopped tomatoes and red or green peppers, sliced olives, grated cheese, chunks of avocado, drained canned beans, etc.) ready to pass at the table. For a quick and easy dressing mix together equal parts of red salsa and nonfat plain Greek yogurt. Delicious!
