Baked Vegetables with Crock pot Meat

 Sweet Potato "Fries"

Peel 2 to 3 sweet potatoes. Slice lengthwise into traditional french fry shape.  Toss with 1-2 T. olive oil.  Spread on a cookie sheet or baking pan with low sides.  Season with coarsely ground sea salt.

Bake at 375 degrees for about 20 minutes.  Turn the potatoes with a spatula after 10 minutes to keep from sticking and to bake evenly.

Brussels Sprouts Roasted with Balsamic Vinegar

Wash, trim, and cut Brussels sprouts in half.  Toss with 1 T. olive oil, 1 clove minced garlic, 1 T. balsamic vinegar, and a pinch of sea salt.

Put in a baking dish and bake at 375 for about 20 minutes.  As with the potatoes, turn them mid-way through cooking.
