WATERMELON AND RASPBERRY ICE
A cool refreshing, dessert, made with abundant summer fruits.  Allow 6 to 8 hours to freeze completely.

In a blender or food processor put:
  • 6 cups watermelon pieces (use seedless variety)
  • 1 cup raspberries
  • 1/3 to 1/2 cup sugar
  • 2 T. flavored liquor such as creme de cassis or triple sec
  • 1 T. lemon juice
Blend well.  Pour through a sieve to remove any solid pieces and into a glass baking dish.  Cover with plastic wrap and place in freezer.  After an hour, stir with a fork to break up frozen pieces.  Stir every 45 to 60 minutes until the mixture reaches desired consistency.

Serve in individual dishes, garnish with fresh blueberries or raspberries.

Nutritional Information:  1/10th of recipe:  80 calories, no fat, 18 grams carbohydrate, 18 grams sugar, 1 gram fiber, 1 gram protein.
