Overnight Oatmeal
Many mornings I have to be up and out to an early meeting with little time for a good breakfast. This hearty version of oatmeal is prepared in 5 minutes the night before and is ready to take along in the morning.
In a container mix:
1/2 cup rolled oats
1/3 cup milk (I use almond or soy milk)
2/3 cup plain nonfat Greek yogurt
1/2 teaspoon cinnamon
2 Tablespoons raisins
Top with 1/2 cup frozen blueberries or other fruit, if desired.
Cover container and let it sit in the refrigerator.
In the morning, stir in the fruit and some nuts and go. The texture is creamy without being drippy, and the nuts add a nice crunch.
