Watermelon Mojitos
I'm not sure that this qualifies as "healthy," but as alcoholic drinks go, it is better than some, and it is quick and easy. I hosted a party recently and served this frozen drink. It was a big hit and several people asked for the recipe, so here it is.
In a blender put:
1 cup sparkling water
3/4 cup white rum
4 oz. frozen limeade concentrate
10 fresh mint leaves.
4-5 cups of frozen seedless watermelon*
Process until well blended. Pour into margarita (or other) glasses. Garnish with a mint leaf and/or a slice of lime. Makes 4-6 servings.
*We never seem to be able to eat an entire watermelon and I always have leftover fruit. I make watermelon balls or cut it into cubes. Place in a single layer on a cookie sheet (with sides) in the freezer. When the watermelon is frozen, transfer to freezer bags or another type of freezer container and store until needed.
Note: Frozen watermelon and other melons can also be used to make the melon soup posted elsewhere on this blog.
