Pear and Onion Pizza


A version of this recipe was in our farm produce bag this week.  I decided to try it.  It was delicious and easy.


Ingredients:

1 medium pizza crust (I used Bobolli)
1 T. olive oil (divided)
1/2 onion, cut into thin slices
1 firm pear, core removed and cut into thin slices
1-2 cups greens (arugula, baby spinach, or baby kale)
1 T. balsamic vinegar
2 T. crumbled feta cheese (optional)


Instructions:

Preheat the oven to 425.
Heat half of the oil in a large skillet, and brush the pizza dough with the remainder.
Cook the onion rings in the skillet over medium heat.  When they are golden, add the pear slices and cook 1-2 minutes.
Remove from the heat and toss with the vinegar.
Spread the pizza crust with the greens and top with the onion/pear mixture.
Sprinkle with cheese, if desired.
Bake directly on the oven rack for a crispy crust or on a cookie sheet if you prefer a softer crust.
Bake 8-10 minutes, until crust is lightly browned around the edges.
