Papaya Soup

We had leftover, overripe papaya last week so I went searching for a cold soup recipe.  As usual, I combined elements of several and here is what I came up with.  It was delicious!  Also check out the watermelon soup recipe elsewhere in this blog for a quick summer side dish or lunch alternative.  I made it for a family dinner last night and all declared it excellent and quite refreshing.

Blend together until smooth:

2-3 cups ripe papaya (cubed)
2 Tablespoons lime juice
1 Tablespoon peeled and chopped ginger root
1/4 to 1/2 cup water or fruit juice (orange, raspberry, or whatever you have on hand)

Chill for later or serve immediately.  Pour into bowls and garnish with berries (raspberries, sliced strawberries, or blueberries) and fresh mint leaves.
