Frozen "Smoothie"

This breakfast recipe is based on one from my sister Melinda Coker's cookbook, Coco's Healthy Cooking.  I've added a few ingredients to suit my preferences.  I have this once or twice a week, more often in the summer.  This recipe is for one serving.


In a blender, food processor, or Ninja put:

1 cup soy or almond milk  (I use Soy organic unsweetened)
1 Tablespoon ground flax or chia seeds
1 Tablespoon cocoa
1 cup power greens (or spinach or kale)

(If you blend these to start and then add the fruit in stages, the processing will go more smoothly.)

1/2 frozen banana (freeze peeled and cut in chunks)
1/2 cup frozen blueberries
1/2 cup frozen strawberries or mango or peaches

Process well, stirring occasionally until all of the fruit chunks are blended smooth.

Scrape into a bowl and top with:

2 Tablespoons lowfat granola 
1 Tablespoon sliced almonds.

Enjoy!

(350 calories, 14 grams protein, 11 grams fiber, 12 grams fat, and 49 grams carbohydrates.)
