Multigrain Vegan Pancakes
These are almost as quick and easy as a mix but certainly better for you! I created this recipe while at the cabin this summer and have made them several times since. Definitely a go to recipe for breakfast.
In a small glass bowl or measuring cup put:
1 c. soy or almond milk
1 T. apple cider vinegar
1/2 c. unsweetened applesauce
In another bowl, mix together:
1/4 c. ground flax and/or chia seeds (buy the ground variety or grind yourself in a coffee bean grinder)
1/4 c. corn meal
1/2 c. oat flour (grind oatmeal in a grinder or food processor)
1/2 c. whole wheat flour
1 t. baking powder
1/2 t. baking soda
1/4 t. salt
Pour the liquid into the dry ingredients and stir.
Add 1/2 c. sliced almonds or chopped walnuts and 1 c. blueberries or sliced bananas
Drop by 1/4 cupfuls onto hot griddle.
