SOBA NOODLE SALAD

Last night I made this for dinner, combining portions of two different recipes and going with ingredients I had. That is the way I often prepare meals. I'm giving you permission to do the same thing. If you have a vegetable or fruit you think would go well in this salad, throw it in. If you are missing an ingredient or two on my list, don't sweat it. For example, last night I only had a few cashews already roasted, but I did have lots of peanuts, so I used both cashews and peanuts. Still good. This morning during a Zoom art group, our task was to draw food. So here you have my art version of the recipe.
