Minestrone Soup
I came home tonight and really wanted tomato soup, but there wasn't any in the cupboard, so I had to improvise. The result was surprisingly good (and quick!). For a vegan version, leave out the sausage and cheese. Makes 2 to 3 servings.
In a medium sized saucepan, brown 1 Italian turkey sausage, removed from its casing, for about 5 minutes, breaking it into bits.
Add:
1 can diced tomatoes, with the juice
1 can kidney beans, drained and rinsed
1 can broth (vegetable or chicken)
1 cup frozen corn
1 oz. whole wheat spaghetti, broken into fourths
1 T. dried basil
Bring to a boil. Simmer uncovered for 8-10 minutes.
Serve. Top with grated Parmesan cheese.
