Asian Slaw
A great summer main dish salad.
Mix together in large bowl:
3 cups shredded cabbage (green, red, and/or Napa)
3 medium carrots, peeled and shredded
1 red pepper, diced
½ cup toasted nuts (peanuts, cashews, or almonds)
1 cup edamame, cooked and shelled
3 green onions, sliced
Spicy Thai Vinaigrette: Place the following in a jar with a lid and shake to mix. Pour over the cabbage mixture and toss.
- 1/4 cup peanut or vegetable oil
- 1/4 cup rice vinegar
- 2 tablespoons roasted sesame oil
- 1 1/2 tablespoons minced peeled fresh ginger
- 2 teaspoons soy sauce
- 2 teaspoons fresh lime juice (to taste)
- 2 -3 tablespoons chili-garlic sauce
- 1 1⁄2 teaspoons honey
- 1 teaspoon minced fresh ginger, peeled
- 1 teaspoon minced garlic
- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh mint leaves, chopped
- 1⁄4 teaspoon black pepper
- 1 1⁄2 teaspoons toasted sesame seeds
- ¼ teaspoon sea salt
